WHATCHA GOT COOKING?

 

Well I am glad you asked! 

We are gonna make Tomato Basil Squares!  Yes, I know, I am excited too!  Lets get started shall we!!

Here are our ingredients:

Pillsbury Pizza Crust

Mayonnaise (NO MIRACLE WHIP!)

Basil

Minced Garlic

Mozzarella Cheese

Shredded Parmesan Cheese (No grated)

Roma Tomatoes 

Just a little info on the ingredients.  I also threw in some mixed Italian cheeses.  Only because I was feeling adventurous.  It did not really change the taste, so you can use it if you want but its not necessary.  You can also use fresh basil and fresh garlic, but I have three kids a husband and work full time.  I don't have time for fresh.  :)

Ok, lets get cooking.

First preheat the oven to around 375 degrees.

Next in a medium size bowl place the following:

1 cup of mayonnaise

1/4 cup parmesan cheese

1 cup mozzarella cheese

1  to 2 tablespoons of basil (original recipe calls for 2, I think I have shortened it to 1)

(I guesstimated)

1 teaspoon garlic

Mix all that up and set to the side

Next Roll out your dough onto your baking dish.

Now I use my Pampered Chef rectangular baking stone.  You can use a round pizza stone, or a regular aluminum pan.  Whatever floats your boat.

Now take your tomatoes and slice them.

Then take about a cup of mozzarella and layer it on your pizza dough. You can use more than this if you like, whatever you want.

Next layer the tomatoes on top of the cheese

Notice the cheese on the tomatoes?  That's just because I felt like putting it there.  You do not have to put cheese on top at this point.  But you can if you want.

Remember that mixture of mayo and cheese we made?  You need it now.  This is also the tricky part.  Take the mixture and spread on top of the tomatoes.  Now the tomatoes are gonna move a little so you may have to use your fingers to hold them down as you are spreading.

Leave them in there for, ohhh about 15 minutes, or until it looks like this.....

Nice and bubbly :)  Just a cooking note if its black that means you cooked it to long.

Jessie you might want to let it cool off before you dive right in. :)

So try these next time you want some pizza, but want something a little different.  Believe me you are going to love them.  Unless you don't like tomatoes and then you can just pick those off.

This also definitely qualifies in the chick food category.  Little Logan would not eat any of it.  I had to end up making him Totinos Pizza Rolls.

That looks good, I will have to try it. I have about 15 tomatoes on my counter and about 15 more that are almost ripe in the garden. I need to find ways to use them up. I am going to blanch some and put them in the freezer today. I already have about 10 bags in there now.

tried it last night and it was delicious! my daughter had a ball helping out too. we customized her area on the dough with an assortment of cheeses (since she is not big on tomatoes or basil...) anyhoo, we had a blast and it tastes amazing! thanks!

Hey, some people at church gave us a big bag of Roma tomatoes and I was trying to figure out how to use them up before they go bad so I decided to try your recipe tonight. It was really good. Josh was even impressed although he said it would be better with meat on it...that's a man for you...gotta have his meat and potatoes. I didn't make the kids pizza rolls but I made them a regular cheese pizza. Kids just don't know good food when they see it. Thanks for the recipe! :)
